I did the same trip with another agency, we didn't eat very well, only bread with coffee for the breakfast and the first night, my friend was so hungry that he made a "ketchup sandwich" ! This night they used margarine with milk in all the dishes... They opened a can of mushrooms and one of corn from us, but it was nos great. and we had to explain what we eat or not in both places we stopped :( Nevertheless we explained very well at the agency, but they was not sufficient. But I didn't read your blog before, and we did'nt take the same agency. They was less worryed about our stomach! But despite of this, it was a wonderful trip, so much beautiful places to see, we're really happy we did it!

@Laloofah - Thanks for going back and reading so many of my posts :) I hope your husband liked them too. We didn't go to Ecuador but I really hope you guys get a chance to visit sometime. If you have the time, don't hesitate to explore the surrounding countries :) The train graveyard isn't anything special. Just a bunch of old trains that have been left to rust and have since turned into a tourist attraction.

What a fascinating place, and what gorgeous photos! I can sure see why the scenery really captivated you. What's the story on the train graveyard?

How cool, a hostel made entirely of salt! Pretty handy to be able to just scrape a little off the wall to sprinkle on your vegan lasagna! ;-) And hey look - quinoa! LOL You didn't tell me you got to see it in situ, and eat a chocolate version! It's sure a pretty plant, so colorful, especially against that backdrop.

I'm glad Miguel got you there and back, safe and sound. What fun memories you have now! I'm so glad you're able to share some of them on this blog! I can't wait to share some of these posts with my husband this weekend... I think he'll find this post especially fascinating. (We'd planned to go to Ecuador a few years ago, but "stuff happened" and we weren't able to. Doesn't look like it was on your itinerary for this trip... have you ever been there?)
